1kg Indonesia Team Pegasing (Espresso) orzechowo-kakaowy Something delicious from old friends Fourth time’s a charm. Or maybe five? And I hope even fifteen! Coffee from this farm has been with our roastery since the beginning. We’re Indonesian coffee enthusiasts—their spice, juiciness, and sweetness ignite our palates every year. The beans come from the best farmers in the Hendra area—those who only harvest the ripest ones. Then the coffee goes to raised drying tables, where it’s regularly turned over for 20-25 days in a special, temperature-controlled tent. Before being placed in Grain Pro and jute bags, the coffee undergoes a double inspection to W filiżance, w naszych próbach w palarni, pokazała profil orzechowo-kakaowy. Barrel Aged: Brasil Espresso orzechowo-kakaowy Birthday cake in your cup This might be the best base for milk coffees we’ve ever released from our roastery. Milk-based coffees taste like a dessert or Malaga ice cream, while the espresso itself resembles chocolate pralines. The barrel passed on plenty of sweet notes to the green beans. There’s a good balance, there’s high sweetness. Everything hits the spot. This drop is highly limited, so slurp away and enjoy before the party’s over! Burundi Mubuga Espresso orzechowo-kakaowy On Demand This coffee was made at the special request of our head roaster. When Rafał joined the team and sat down with us for his very first cupping, he blurted out right away, “Hey, I don’t think you’ve ever had a coffee from Burundi, and I love them so much!” We had, but a long time ago! So, we decided to make Rafał’s life a bit sweeter—we ordered samples and picked this (and one more!) fantastic lot. Located in the Ngozi Province, the Mubuga washing station works with over 1,900 local farmers who deliver their carefully handpicked harvest here every year. Is it coffee? Is it lemonade? Or maybe it’s just one of the best blends we’ve ever whipped up? One thing’s for sure—it’s our sweetest, most distinct, and juiciest one yet. We’re mixing a classic washed Colombian with a Colombian co-fermented icon! For the first round, we went with watermelon. This combo is surprising and fresh, yet strangely comforting. Let’s be real—this isn’t a coffee for a caffeine kick; it’s for joyful sipping on lazy summer afternoons. It’s like DJ Assault remixed by Dean Blunt. It fits. Not only that, but it vibes. The farmer behind this coffee, Huver Castillo, works as a schoolteacher day-to-day. He leans heavily new school rather than old school—something you’ll understand as soon as you take a sip. A math teacher and third-generation producer, today he crafts coffees alongside his father at the family farm, El Paseo, in Nariño, high above the Buesaco Valley. The cup exhibits an impressive structural evolution, leading with intense notes of smooth chocolate and refined marzipan, beautifully balanced by a sweet orange marmalade finish. I had the opportunity to ask them why they name their coffees this way and whether it means most of their coffees are co-fermented coffees? They replied: absolutely not! They name their coffee batches because the taste of a particular lot often takes them back to their childhood and brings back memories of flavors. This one was so fruity that the brothers agreed that this coffee tasted like bubble gum. Very juicy, very sweet, tropical. And this is a classic natural. Numerous cuppings, lectures, and conversations have allowed us to truly understand his approach to coffee production – especially processing, which is his true passion. The coffee you have in front of you is natural, but not in the classic sense. It first underwent anaerobic fermentation in whole cherries and was then dried on raised beds. Corazón de Jesús is the name of the place where Johnny and Álvaro—father and son—process coffee from their other farms. This particular coffee was grown on the Los Toños farm. It is situated at an elevation of 1,500–1,700 meters above sea level. This is what direct trade truly means to me. We’ve been working with Hellen for three years now, thanks to Nicolas, who exports coffee from Costa Rica. Last year, I had the pleasure of driving the most winding and bumpy road up to the top of the mountain where Hellen’s home and farm are located. We arrived in a car Nico had borrowed from his mom, since his own had broken down the day before. At some point, his mom’s small SUV couldn’t make it any farther, so Hellen came down in her big pickup and towed us up the rest of the way. Although Caturra was born in Brazil, it made its true career in Colombia, and later right here in Costa Rica. According to World Coffee Research and Perfect Daily Grind, it is an absolute classic and a benchmark against which other modern botanical varieties are evaluated. Volcanic soil, high elevation, and a stable microclimate allow the cherries to mature slowly, building flavor exactly as it should. On this farm, nothing is left to chance – from variety selection right down to precise processing. In the cup: caramel, milk chocolate, raspberries, and a fig finish. This year’s harvest led us to a natural process, meaning the whole coffee cherry is dried on raised beds right after picking. During that time, the seed absorbs the character of the entire fruit: sugars and minerals seep in, making the final cup super sweet, full-bodied, and jammy. Raspberries, Earl Grey, sweet citrus. And here come the questions: how is that and why do we then offer coffee from Kenya as our roaster team’s choice for espresso.
